2 cups hominy, cooked, drained
1/4 cup milk
3 tablespoons oil
1/2 onion, chopped
1 clove garlic, minced
1/2 cup rajas (or green chiles, canned, if you must!)
1/2 cup cotija cheese
salt and pepper

1. Combine the hominy and milk in a food processor and blend for about 5 to seconds, or just until the mixture is ground coarsely, but not mushy. Stop at least once to scrape the bowl with a rubber spatula.

2. Heat the oil in a 10-inch skillet, sauté the onion and garlic until soft, stir in the hominy mixture and the green chile rajas and simmer for a few minutes.

3. Remove from heat, stir in the cheese and season to taste.
