I think one of the reasons beans have such a bad reputation is beans on toast. It's a pretty dire dish, if you ask me. But then I had a Tuscan version, with Zolfini beans and green olive oil and I had to rethink things. The Mexican version is molletes and I could eat them forever, especially my version. Making due with what was at hand, this morning I had mashed runner cannellini beans on a warmed pita. I topped with some heirloom tomatoes and black pepper, then some olive oil.
