I’m very late to the homemade granola game but I’m a complete convert. It’s a slight pain in the rear but the end results are so delicious, it’s worth the bother. Of course, I have to take the basic recipe and make it more “New World.”
Makes about 6 servings
- 3 cups rolled oats, uncooked
- 3 tablespoons Rancho Gordo Piloncillo
- 1/2 teaspoon grated Rancho Gordo Canela
- 1/3 cup raw honey
- 1/4 cup coconut oil
- 1 teaspoon Rancho Gordo Mexican Vanilla Extract
- Combine all ingredients in a bowl and mix well. Spread out on a large cookie sheet and cook in a preheated 350F oven for 15 minutes.
- Remove from oven and stir in:
- 1/2 cup Xoxoc dried Xoconostle treats
- 1/2 cup raw pepitas (hulled pumpkin seeds)
- 1/2 cup dried, flaked unsweetened coconut
3. Return to oven for 5 minutes. Remove, allow to cool and then store in an airtight container.
